Mastering Al Dente Pasta
What is Al Dente?
'Al dente' literally translates to 'to the tooth'. It refers to pasta that is cooked just enough to retain a firm, slightly chewy texture. It's the gold standard of Italian cooking.
Step 1: The Water to Salt Ratio
Your pasta water should be as salty as the sea. Use about 1 tablespoon of salt for every 4 quarts of water. This is your only chance to season the pasta itself.
Step 2: Don't Use Oil
Adding oil to the water prevents the sauce from sticking to the pasta. Instead, just give it a stir in the first 2 minutes of boiling to prevent sticking.
Step 3: The 2-Minute Rule
Start testing your pasta 2 minutes before the package directions say it's done. It should have a tiny white dot in the center when you bite into it.
Step 4: Finish in the Sauce
Always transfer your pasta directly to the sauce using tongs or a spider. Add a splash of starchy pasta water to emulsify the sauce and create a silky finish.
