Master the Flame
Grilling is about more than just high heat. It's about controlling temperature zones and understanding the difference between direct and indirect cooking.
The Two-Zone Setup
Place coals on one side of the grill only. This gives you a 'hot zone' for searing and a 'cool zone' for finishing larger cuts of meat without burning them.
Don't Flip Too Early
If the meat is sticking to the grates, it's not ready to flip. Wait for the Maillard reaction to naturally release the meat from the grill.
The Importance of the Rest
Always let your meat rest for at least 5-10 minutes after grilling. This allows the juices to redistribute, ensuring every bite is moist and flavorful.
