Authentic Korean Dolsot Bibimbap (Sizzling Stone Bowl Mixed Rice)
South Korea's royal culinary showpiece: steamed short-grain rice served in a sizzling hot oiled stone bowl to create a crispy golden rice crust (nurungji), adorned with vibrant seasoned namul vegetables, savory bulgogi beef, a golden egg yolk, and rich sweet-spicy gochujang sauce.

Ingredients
Rice & Bulgogi Beef
- 4 cups cooked Korean short-grain sushi rice
- 300g (10 oz) ribeye or sirloin beef, sliced paper-thin
- 1.5 tbsp soy sauce, 1 tbsp toasted sesame oil, 1 tbsp brown sugar, 2 cloves minced garlic
- 1 tbsp toasted sesame oil (to coat stone bowls)
Seasoned Namul Vegetables
- 200g fresh spinach, blanched and seasoned with sesame oil and garlic
- 150g soybean sprouts (kongnamul), boiled and seasoned with salt and sesame oil
- 1 medium zucchini, julienned and lightly sautéed
- 1 large carrot, julienned and flash-sautéed
- 6 fresh shiitake mushrooms, thinly sliced and sautéed with a splash of soy sauce
Gochujang Sauce & Toppings
- 3 tbsp Korean red pepper paste (gochujang)
- 1 tbsp toasted sesame oil, 1 tbsp honey or corn syrup, 1 tbsp warm water, 1 tsp apple cider vinegar
- 4 fresh egg yolks or sunny-side-up fried eggs
- Toasted white sesame seeds and shredded toasted nori seaweed (gim)
Instructions
Marinate & Cook Bulgogi Beef
Mix sliced beef with soy sauce, sesame oil, brown sugar, and minced garlic. Marinate for 15 minutes. Heat a skillet over high heat and sear beef for 2-3 minutes until browned and caramelized. Set aside.
Prepare the Seasoned Namul Vegetables
Blanch spinach in boiling water for 30 seconds, squeeze out excess water, and toss with a pinch of salt, sesame oil, and garlic. Boil soybean sprouts for 3 minutes and season similarly. Flash-sauté zucchini, carrots, and shiitake mushrooms separately in a drop of sesame oil until just tender-crisp.
Mix the Bibimbap Gochujang Sauce
In a small bowl, whisk gochujang, sesame oil, honey, warm water, apple cider vinegar, and 1 tsp toasted sesame seeds until smooth and glossy.
Crisp the Rice in Hot Stone Bowls
Brush the inside of 4 Korean stone bowls (dolsot) or heavy cast iron skillets with 1 teaspoon of toasted sesame oil. Pack 1 cup of warm rice firmly on the bottom. Place the bowl directly over medium heat on the stovetop for 5-7 minutes until you hear a continuous crackling sound (creating the prized crispy rice bottom).
Assemble the Rainbow Toppings
Arrange the seasoned spinach, carrots, zucchini, soybean sprouts, shiitake mushrooms, and cooked bulgogi beef in neat colorful segments on top of the sizzling rice.
Garnish & Mix
Place a fresh egg yolk or sunny-side-up egg in the center. Top with a spoonful of gochujang sauce, toasted sesame seeds, and seaweed strips. Serve sizzling at the table—diners mix everything vigorously with a metal spoon before eating.
