Artisanal Parisian French Macarons (Raspberry, Pistachio & Chocolate)

Ingredients
Almond Meringue Shells (Macaronage)
- 200g ultra-fine almond flour, sifted
- 200g confectioners' powdered sugar, sifted
- 150g aged egg whites (room temperature), divided into two equal 75g portions
- 200g granulated sugar
- 50ml filtered water (for Italian meringue syrup)
- Gel food colorings (dusty rose, pistachio green, and cocoa)
Fillings (Ganache & Buttercream)
- 100g 70% dark French chocolate + 100ml heavy whipping cream (Ganache)
- 100g unsalted butter + 2 tbsp pistachio paste + 60g powdered sugar (Pistachio Cream)
- 100g seedless raspberry jam + 1 tsp lemon juice (Raspberry Center)
Instructions
Sift the Tant-Pour-Tant
Pulse almond flour and powdered sugar in a food processor, then sift through a fine mesh twice to guarantee mirror-smooth shell surfaces.
Cook the Italian Meringue
Boil water and granulated sugar until it reaches 118°C (244°F). Slowly stream the hot sugar syrup into whipping egg whites until thick, glossy, and cooled to 40°C.
The Macaronage Technique
Fold the meringue into the almond-sugar mixture with a spatula in broad circular motions until the batter flows off the spatula in a continuous ribbon resembling lava.
Piping and Resting (Pelliculage)
Pipe 3.5cm circles onto silicone baking mats. Rap the tray firmly on the counter 4 times to release air bubbles. Let rest at room temperature for 30-40 minutes until a dry skin forms that doesn't stick to your finger.
Bake & Sandwich
Bake at 150°C (300°F) for 14-16 minutes until iconic ruffled feet form. Cool completely, pipe your favorite fillings, sandwich shells together, and refrigerate for 24 hours (maturation) before eating for melt-in-the-mouth texture.
