Classic Lebanese Tabbouleh

A refreshing and healthy herb-heavy salad with finely chopped parsley, mint, tomatoes, and bulgur wheat.

Classic Lebanese Tabbouleh

Ingredients

Salad

  • 3 bunches fresh flat-leaf parsley
  • 1/4 cup fresh mint
  • 3 ripe tomatoes, finely diced
  • 1/4 cup fine bulgur wheat
  • 2 green onions, sliced

Dressing

  • 1/4 cup extra virgin olive oil
  • 3 tbsp lemon juice
  • Salt and black pepper

Soak Bulgur

Wash the bulgur wheat and soak it in lemon juice for 20 minutes until it softens and absorbs the citrus flavor.

Prep Parsley

Wash and thoroughly dry the parsley. This is the most important step! Finely chop the parsley leaves by hand (avoid using a food processor as it will bruise the herbs).

Prep Vegetables

Finely dice the tomatoes and green onions. Chop the fresh mint leaves.

Combine

In a large bowl, combine the chopped parsley, mint, tomatoes, onions, and the soaked bulgur.

Dress and Chill

Drizzle with olive oil and season with salt and pepper. Toss gently and let it sit in the fridge for 30 minutes before serving to let the flavors meld.
