Peruvian Lomo Saltado
A popular Peruvian stir-fry that combines marinated strips of sirloin with onions, tomatoes, and French fries. A perfect fusion of cultures.
Ingredients
The Stir-fry
- 500g sirloin steak, sliced into strips
- 1 red onion, sliced
- 2 tomatoes, sliced
- 2 cups cooked French fries
The Sauce
- 2 tbsp soy sauce
- 1 tbsp red wine vinegar
- 1 tsp cumin
- Fresh cilantro

- Steamed white rice
Instructions
Sear Steak
Heat oil in a very hot wok or large skillet. Sear the steak strips in batches until browned and just cooked through. Remove and set aside.
Sauté Veggies
In the same pan, sauté the red onion until it starts to soften but still has a crunch. Add the tomatoes and cook for another minute.
Combine
Add the steak back to the pan along with the soy sauce, vinegar, and cumin. Toss everything together over high heat.
Add Fries
Gently fold in the cooked French fries and a handful of chopped cilantro. The fries should soak up some of the savory sauce.
Serve
Serve immediately while the fries are still somewhat crispy, alongside a portion of steamed white rice.
