Traditional Sunday Roast with Yorkshire Pudding

Ingredients

For the Roast Beef

  • 1.5 kg prime beef sirloin or rib roast
  • 2 tbsp olive oil or English mustard powder
  • 4 cloves garlic, crushed
  • Fresh rosemary and thyme sprigs
  • Coarse sea salt and cracked black pepper

For the Yorkshire Puddings

  • 140g all-purpose flour
  • 4 large free-range eggs
  • 200ml whole milk
  • Vegetable oil or beef dripping (for pudding tins)

For the Crispy Roast Potatoes & Gravy

  • 1.2 kg Maris Piper potatoes, quartered
  • 3 tbsp beef dripping or goose fat
  • 2 large red onions, sliced
  • 2 tbsp flour
  • 500ml rich beef stock
  • 100ml red wine

Season & Sear the Beef

Bring beef to room temperature. Rub with olive oil, crushed garlic, rosemary, salt, and pepper. Roast in preheated oven at 220°C (425°F) for 20 minutes, then reduce to 180°C (350°F) for 35-40 minutes (for medium-rare 54°C). Rest for 20 minutes before carving.

Make Yorkshire Pudding Batter

Whisk flour, eggs, and milk until smooth. Rest batter at room temperature for at least 30 minutes. Add 1 tsp beef dripping into each cup of a 12-hole muffin tin and place in oven at 220°C until smoking hot.

Bake Yorkshire Puddings

Quickly pour batter into smoking hot tin cups and bake at 220°C for 20-25 minutes without opening the oven door, until tall, golden, and crispy.

Roast Potatoes

Parboil potatoes for 8 minutes, drain, and shake in colander to roughen edges. Toss in hot beef dripping with rosemary and roast at 200°C for 45 minutes until extra crunchy.

Prepare Onion Gravy

In the roasting pan with beef juices, caramelize red onions, stir in flour, deglaze with red wine, and simmer with beef stock until glossy and rich.

Serve the Feast

Carve thin slices of roast beef, serve alongside puffy Yorkshire puddings, crispy roast potatoes, steamed vegetables, and generous spoonfuls of hot onion gravy.
