Watermelon Mint Cooler
An ultra-refreshing, blush-pink summer drink made from fresh watermelon, lime, and fresh mint. No added sugar needed.
Ingredients
Cooler
- 6 cups seedless watermelon, cubed and frozen
- Juice of 2 limes
- 1 cup cold sparkling water
- 10 fresh mint leaves
- 1 tbsp honey (optional)
- Ice & lime wedges to serve
Instructions
Freeze the Watermelon
Cut watermelon into cubes and freeze them for at least 4 hours or overnight. Frozen watermelon makes the drink ice-cold and thick without watering it down.
Blend
Add the frozen watermelon chunks, fresh lime juice, mint leaves, and honey (if using) into a blender. Blend on high until smooth.
Add Sparkle
Add the sparkling water to the blender and pulse just 2-3 times. You want to preserve some of the fizz.
Strain (Optional)
For an ultra-smooth drink, pour through a fine-mesh strainer. For a thicker, more refreshing slush, serve as-is.
Serve
Pour into tall glasses over fresh ice. Garnish with a lime wedge and a sprig of fresh mint. Serve immediately.
