Authentic Turkish Adana Kebabs
Spicy and deeply flavorful hand-minced meat kebabs grilled on wide flat skewers.

Ingredients
Meat Mixture
- 500g ground lamb (or lamb/beef mix)
- 1 red bell pepper, finely chopped
- 1 onion, grated and juice squeezed out
- 2 cloves garlic, minced
Spices
- 1 tbsp paprika
- 1 tsp cumin
- 1 tsp red pepper flakes (Pul Biber)
- Salt and black pepper
Serving
- Flatbreads (Lavas or Pita)
- Sumac onions
- Grilled tomatoes and peppers
Instructions
Prepare Vegetables
Finely chop the red bell pepper. Grate the onion, then squeeze the grated onion in a clean towel to remove all the bitter juices. This prevents the kebabs from falling apart.
Mix
In a large bowl, combine the ground meat, prepared vegetables, minced garlic, paprika, cumin, red pepper flakes, salt, and pepper.
Knead
Knead the mixture thoroughly by hand for about 5-10 minutes until it becomes sticky and binds together. Chill in the fridge for 30 minutes.
Shape
Take a handful of the meat and mold it around a wide, flat metal skewer. Squeeze gently to flatten and elongate the meat along the skewer.
Grill
Grill the kebabs over hot coals or on a very hot grill pan for about 10-12 minutes, turning occasionally until charred on the outside and cooked through.
Serve
Slide the meat off the skewers using a piece of flatbread. Serve immediately with sumac-dusted onions and charred vegetables.
