Chicken Tikka Masala
Tender chicken pieces in a rich, spiced tomato and cream sauce.

- 500g chicken breast, cubed
- 1 cup yogurt
- 2 tbsp tikka paste
- 400g tomato passata
- 200ml heavy cream
- Basmati rice
Instructions
Marinate the Chicken
In a bowl, combine the chicken cubes with yogurt, tikka paste, and a squeeze of lemon. Let marinate for at least 1 hour, or ideally overnight in the fridge.
Char the Chicken
Preheat your broiler or a heavy skillet. Cook the marinated chicken over high heat until it's charred and cooked through. Set aside.
Build the Base
In a large pot, sauté finely diced onions, ginger, and garlic in oil until golden brown. Stir in extra spices like garam masala and cumin if desired.
Simmer the Sauce
Pour in the tomato passata and a splash of water. Bring to a simmer and cook for 15 minutes until the sauce thickens and the flavors meld.
Combine and Finish
Add the charred chicken pieces back into the sauce. Stir in the heavy cream and simmer gently for another 5 minutes.
Garnish and Serve
Check for seasoning, adding salt or sugar as needed. Garnish with fresh cilantro and serve hot over fluffy basmati rice with naan.
