Classic Homemade Pasta with Rich Tomato Sauce
Fresh, homemade pasta paired with a slow-simmered, rich tomato basil sauce.
Ingredients
For the Pasta:
- 400g '00' flour
- 4 large eggs
- 1/2 tsp salt
For the Sauce:
- 2 tbsp olive oil
- 3 cloves garlic
- 800g canned tomatoes
- 1 bunch fresh basil
Instructions
Prepare the Dough
Mound the flour on a clean work surface and create a well in the center. Crack the eggs into the well and add the salt. Gradually incorporate the flour until a shaggy dough forms.
Knead the Dough
Knead the dough for 8-10 minutes until it becomes smooth and elastic. If it's too sticky, add a sprinkle of flour; if too dry, add a few drops of water.
Rest the Dough
Wrap the dough tightly in plastic wrap and let it rest at room temperature for at least 30 minutes. This allows the gluten to relax.
Simmer the Sauce
While the dough rests, heat olive oil in a pan, add minced garlic until fragrant. Pour in crushed tomatoes, season with salt and pepper, and simmer on low for 30 minutes.
Roll and Cut
Divide the dough into 4 pieces. Roll out each piece using a pasta machine or rolling pin until very thin. Cut into your desired shape (fettuccine, pappardelle, etc.).
Cook and Combine
Boil the fresh pasta in salted water for 2-3 minutes. Drain and toss immediately with the hot tomato sauce and fresh basil leaves.
