Classic Shakshuka
North African and Middle Eastern dish of eggs poached in a spicy tomato and pepper sauce.

Ingredients
Sauce
- 1 onion, diced
- 1 red bell pepper, sliced
- 3 cloves garlic
- 800g crushed tomatoes
- 1 tsp cumin, paprika, chili flakes
Eggs & Finish
- 4-6 large eggs
- Fresh cilantro or parsley
- Feta cheese (optional)
- Crusty bread
Instructions

Sauté Veggies
In a large skillet, sauté the onion and bell pepper until softened. Add the garlic and spices, cooking for 1 minute until fragrant.

Simmer Sauce
Pour in the crushed tomatoes and simmer for 10-15 minutes until the sauce has thickened slightly. Season with salt and pepper.

Poach Eggs
Use a spoon to make small wells in the sauce. Gently crack an egg into each well. Cover the skillet and cook for 5-8 minutes until the whites are set but the yolks are still runny.

Finish
Garnish with fresh herbs and crumbled feta. Serve hot directly from the pan with plenty of bread for dipping.
