Szechuan Kung Pao Chicken
A spicy, stir-fried Chinese dish made with chicken, peanuts, vegetables, and chili peppers.

Ingredients
Stir-fry:
- 500g chicken breast, cubed
- 1/2 cup roasted peanuts
- 1 red bell pepper
- 6-8 dried red chilies
- 3 green onions
Sauce:
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp hoisin sauce
- 1 tsp sugar
- 1 tsp cornstarch
Instructions

Marinate Chicken
Toss chicken with a splash of soy sauce and a teaspoon of cornstarch. Let sit for 10 minutes.

Make Sauce
Whisk all sauce ingredients in a small bowl until the cornstarch is dissolved.

Stir-fry
Heat oil in a wok. Add dried chilies and Szechuan peppercorns until fragrant. Add chicken and cook until browned.

Add Veggies
Stir in bell peppers and green onions. Pour the sauce over and stir until thickened and glossy.

Finish
Toss in the roasted peanuts and serve immediately over steamed white rice.
