Seafood Paella
Authentic Spanish seafood paella with saffron-infused rice, shrimp, mussels, and squid.

Ingredients
Base:
- 300g Bomba or Arborio rice
- 1L seafood stock
- 1/2 tsp saffron threads
- 1 tsp smoked paprika
Seafood:
- 8 large shrimp
- 12 mussels
- 200g squid rings
Aromatics:
- 1 onion, diced
- 1 bell pepper, diced
- 3 cloves garlic
- 2 tomatoes, grated

Infuse Saffron
Crush saffron threads and add to warm seafood stock. Let it steep while you prep the other ingredients.

Sauté Aromatics
In a paella pan, sauté onion, pepper, and garlic until softened. Add tomatoes and paprika to form a 'sofrito'.

Toast Rice
Add rice to the pan and stir for 2 minutes. Pour in the saffron stock. Do NOT stir after this point to allow a 'socarrat' (crust) to form.

Add Seafood
Gently press the shrimp, mussels, and squid into the rice. Simmer for 15-20 minutes until rice is tender and liquid is absorbed.

Rest
Cover with a towel and let rest for 5 minutes. Serve with fresh lemon wedges.
